This corn salad is the perfect summer side dish!
Fresh corn is tossed with cherry tomatoes, crunchy cucumber, onions, avocado, tangy feta, and fresh herbs, all in a sweet-and-tangy red wine vinaigrette.

Add all of the dressing ingredients and whisk to combine, until the vinaigrette is emulsified.
Add the corn to the boiling water and cook for 3 minutes. Transfer the corn to the ice bath to cool.
Cut the kernels from the ears of corn. Place the corn in a large bowl.
Place all of the salad ingredients in the bowl with the corn and stir them together. Pour in the dressing and season to taste, then serve.
