This is a simple, low-fat version of the classic Quiche we all love but without the butter and cream. It is light and fluffy and packed with a vitamin punch from the spinach. Enjoy it for breakfast or lunch. This Spinach & Cheese Quiche is sure to please about any crowd!
Ingredients
1 pie shell chilled (ready made or homemade)
1 cup evaporated milk
1 cup shredded cheddar cheese
1 10 oz pkg frozen chopped spinach
3 eggs
Directions:
Preheat oven to 350 degrees.
Mix all ingredients together until light and fluffy.
Pour into pie shell.
Bake for 50-60 minutes until just set in center and crust is light brown.
Let sit for 10 minutes to cool before serving.
That’s it! Serve alone, with soup or even a nice fresh salad.
