Queso dip is perfect by itself but with the addition of spicy sausage and Rotel, this hot cheesy dip becomes ten times better.

Recipe Ingredients

You only need 3 simple ingredients for this cheesy rotel dip that you probably have on hand!

  • Velvetta Cheese – processed cheese product
  • Rotel Original diced tomatoes – Rotel Tomatoes, are petite diced tomatoes with green chilis and spices. They’re a little spice, almost like salsa! You can get them without spice, too.
  • Sausage – pork sausage ( I like spicy the best!)

If you like spicy recipes, you can also add in some green chiles as well as an extra can of rotel tomatoes. Some people even add in some taco seasoning for a little bit of extra flavor.

How to Make Rotel Dip

This is one of the easiest dips to make…promise! Plus you can add in a few variations to mix it up!

1. Brown the meat

Brown sausage in a skillet on the stove.

2. Add the ingredients

Add Rotel tomatoes and cheese to the skillet with the sausage.

3. Melt the cheese

Continue to cook on low, stirring often until the cheese is melted.

4. Serve

Serve with cut-up veggies, crackers, or tortilla chips!

Tips + Variations

Rotel Cheese Dip with Ground Beef – change up the sausage with ground beef for a milder version of this dip

Brown the meat and drain. Add Rotel tomatoes (undrained) and cheese. Stir it over low heat until melted.

Rotel Dip with Cream Cheese – you can substitute cream cheese for the Velvetta in this recipe. It will have a slightly different taste but will still be great!

Serve with veggies – Leave the chips in the bag and use chopped-up veggies to serve with this dip instead.

How to Make Rotel Dip in the Crock Pot

This dip can also be made in the slow cooker! Just add your browned sausage, cheese, and Rotel tomatoes to a mini crockpot and cook on low for 2-3 hours. Be sure to stir occasionally until it’s melted. Once melted, set the slow cooker to the warm setting so it doesn’t burn.

Can this dip be made in advance?

A great way to keep this easy dip recipe warm after cooking it on the stovetop is to use your slow cooker! Just add the cooked dip to the crock and set on warm.

If you’d like to make this rotel sausage dip the day before your gathering, just allow the dip to cool and then store in the fridge until you’re ready to eat it. Heat on the stove or in a crock pot. You may need to add a little milk to help the dip not be too thick.

What toppings work well with this dip?

I like to chop up some green onions as well as add some sriracha sauce to make it more of a medium heat flavoring.

Are Rotel tomatoes spicy?

Yes, they do have a spicy kick.

How to Store Rotel Dip:

You can definitely freeze Rotel tip in a freezer safe container for up to 3 months. When you’re ready to eat, just allow the dip to thaw in the fridge and heat up on the stove or in the crock pot.

      Let it come closer to room temp. The hotter it is, the less it is set up.

      No need to drain the Rotel. The little bit of liquid in the can will be absorbed by the sausage.

    I use one cream of mushroom soup and add Worcestershire sauce to the meat that you cook in the skillet before you put it in the crockpot it is delicious

        Not cheddar as it will just be clumpy and stringy. Velveeta is creamy and smooth and melts completely.
