I can’t believe that I am sending my last baby off to school this fall! While I’m sad about being home every day without any kids here, I am excited about this new phase we’re entering! My three kiddos will head to school every morning on the big yellow school bus as I wave goodbye and I’ll be standing there each day welcoming them when they get home. It’s so bittersweet!

Even though I’m sending them off each day, I can send a little piece of home with them by packing their lunch with all good things they love! I feel confident in knowing that they are having a meal mid-day that will fuel them and keep them going the rest of the day since I’m packing things they love and will eat.

This is especially comforting as I send my 5-year-old to school for her first year! I know that she will have time to sit down, open her lunch box and eat right away – not waste any time standing in line for a tray.

One of my kids’ favorite lunches is peanut butter and jelly sandwiches. Super easy AND super good for you! It’s packed with protein, just enough carbs to keep you going all day and it’s very affordable to make! SCORE! This back to school season, ALDI has been my go-to for all of my shopping needs!

While a normal peanut butter and jelly sandwich is easy to make, I like to change things up a bit in their lunch boxes to keep it fun and interesting.

Peanut Butter and Jelly Sushi Rolls

Not technically sushi, my kids get a kick out of these delicious sandwich roll-ups!

Easy to make and so fun! And, when you pack in other good- for- you foods, it’s the perfect lunch for any hungry kid!

Here’s how to make Peanut Butter and Jelly Sushi Rolls!

Peanut Butter and Jelly Sushi Rolls

First, take your bread and cut off the outside crust. Using a rolling pin or a smooth sided drinking glass, roll out your bread completely flat.

Once it’s flat, add a good helping of peanut butter and top with your favorite jelly. Starting at one end, roll up and place seam side down on your cutting board.

Cut the roll into small sections and repeat with the 2nd slice of bread. I like to use 2 slices since this is what a normal sandwich portion would be.

I also like to use a good-quality bread like L’oven Fresh 12 Grain Bread from ALDI to make our Peanut Butter and Jelly Sushi Rolls. And I REALLY like to use their Peanut Delight Creamy Peanut Butter and Berry Hill Strawberry Preserves. They both have the best flavor!

Ingredients  

  • 2 slices L'oven Fresh 12 Grain Bread
  • 4 Tablespoons Peanut Delight Creamy Peanut Butter
  • 2 Tablespoons Berry Hill Strawberry Preserves

Instructions 

  • First, cut off the crust of the slice of bread.
  • Using a rolling pin or a smooth sided glass, roll out your bread completely flat
  • Once the bread is flat, add half of the peanut butter to the slice of bread and smooth out.
  • Next, add half of the jelly on top of the peanut butter
  • Starting at one end, roll up and place seam side down on your cutting board.
  • Cut the roll into small sections to resemble sushi rolls.
  • Repeat with the second slice of bread.
