It’s no secret that I love to prepare food for my family – bake, cook, mix up – whatever it is, I love to do it! Sharing food with those around you is equal to sharing love in my book. So, when I find a new recipe or ingredient to try, I’m excited to see how it turns out! Good or bad. So when the folks at Clever Girls and I Can’t Believe It’s Not Butter asked me to create a recipe with the NEW and improved buttery spread, I was all in!
The NEW I Can’t Believe It’s Not Butter offers a fresh butter taste that adds flavor to any meal, and can be used for spreading, topping, sautéing, cooking or baking. I am a butter gal through and through – so when I tried the spread on a blueberry muffin to try it out – I was shocked at how much it tastes like real butter! The new I Can’t Believe It’s Not Butter!® is made from real, simple ingredients – 100% taste, 0% artificial preservatives – and is still unbelievably delicious!
How’s it different?
The new I Can’t Believe It’s Not Butter!® is made from real, simple ingredients you can recognize like a delicious blend of plant-based oils, purified water and a pinch of salt. Just one bite and you’ll ‘Believe’! The new I Can’t Believe It’s Not Butter! is the first spread from Unilever in the U.S. to be made from non-GMO sourced ingredients. Unilever spreads can be part of an overall healthy, balanced diet and provide a source of good fats, similar to the good fats found in avocados, walnuts and almonds. The new I Can’t Believe It’s Not Butter! is made with plant-based oils and are a source of both monounsaturated and polyunsaturated fatty acids, as well as a good source of omega-3 ALA and it has 40% fewer calories and 70% less saturated fat than butter. As with all of their spreads, sticks and sprays, the new I Can’t Believe It’s Not Butter! contains 0g trans fat per serving, no cholesterol and no partially hydrogenated vegetable oils. This new recipe is offered in the Original, Light, and Olive Oil varieties.
Put to the Test
I normally bake with real butter – like I said, I’m a southern butter gal at heart – so I wasn’t so sure about using a “spread” to bake with. I decided to make an Oatmeal Raisin Bar. I thought for sure I’d be able to tell how it would hold up in a sweet treat that needed to be moist and flavorful – and it did! I was completely surprised by the outcome!
This bar cookie was so delicious and butter tasting, it was like eating a cookie! It was moist and had so much flavor that I couldn’t quit eating it! (tip: do not make this cookie early in the day when you’re family is not home to share them. You MAY end up eating more than your share!) Speaking of kids, they loved them! They were so excited to eat this sweet treat when they got home from school since the whole house smelled heavenly! I can honestly say that you won’t be able to tell whether this is real butter OR the NEW I Can’t Believe It’s Not Butter spread. It’s that good!

Oatmeal Raisin Bars
- 2 cups all-purpose flour
- 2 cups uncooked old fashioned oats [or quick-cooking oats]
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1 cup I Can't Believe It's Not Butter!® Spread
- 1 cup firmly packed light brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp. vanilla extract
- 2 cups raisins
- Preheat oven to 350°. Spray 13 x 9-inch baking pan with no-stick cooking spray; set aside.
- Combine flour, oats, baking soda, salt and cinnamon in medium bowl; set aside.
- Beat I Can't Believe It's Not Butter!® Spread with sugars in large bowl with electric mixer on low speed until creamy. Beat in eggs and vanilla until blended. Gradually beat in flour mixture on slow speed just until blended. Stir in raisins. Evenly spread into prepared pan.
- Bake 35 minutes or until toothpick inserted 1-inch from edge comes out clean. Cool completely on wire rack. Cut into 32 bars.

I’ve used I Can’t Believe It’s Not Butter for over 30 years but no longer. The new formula tastes horrible and performs poorly when you cook with it. It no longer contains buttermilk, it’s main ingredient is water. Unilever ruined a good product. No one that I know who used it before uses it now.
They ruined the taste myself and others have loved since 1986. I bought the last twelve pounds of the old recipe I could find in my area. Not sure what I will do when its gone but this company has lost me as a customer. I will test other products to see if I can find a replacement.
