I like them. I love it. Guys, I’m not even lying about my obsession with these buttermilk pancake recipes since my childhood. These fluffy pancakes have soft and crisp edges. The search is done!! Some have late-night pizza cravings, and my cravings are late-night pancakes.

A family favorite is my batch of homemade pancakes made from scratch–no box mixes in this pancakes-from-scratch recipe!

Sure, it seems convenient to open a box of pancake mix from the store, but I promise it’s no more work to make them yourself with ingredients in your pantry.

Whether it’s my homemade waffle recipe breakfast casserole, or french toast casserole, we sure love our weekend breakfasts in our house!

These delicious, light and fluffy homemade pancakes are easy to make and are packed full of flavor. Everything is mixed in one mixing bowl so you won’t have several dishes to clean up after.

I love that this pancake recipe makes extra to keep on hand for the week. Lay the extra pancakes on a baking sheet and pop them in the freezer. Pull them out and microwave as many as needed. It’s super easy for on-the-go mornings!

What Goes in Homemade Pancakes?

Making your own homemade pancakes allows you to control what goes in. There aren’t any ingredients you can’t pronounce or preservatives you don’t need.

Pancake Ingredients

  •  flour – the base of this recipe. I like regular flour but you could use wheat to give it a healthier twist.
  • melted butter – trust me on this one. Butter is what gives these pancakes amazing flavor.
  • baking powder – for fluffy stacks!
  • milk – whole milk is best but you could try a non-dairy milk option.
  • eggs – large eggs.
  • sugar  – Just a tad is needed. You could leave it out – but I’m not sure how that would affect the taste.

How to Homemade Pancakes From Scratch

  1. Sift: Sift together the dry ingredients: flour, baking powder, salt, and sugar into a large bowl.
  2. Add the wet ingredients to the dry ingredients: Make a well in the middle of the dry mix. Add the wet ingredients – egg, milk, and butter.
  3. Lightly Mix: Lightly whisk the batter together until just mixed. The batter will have small lumps. Let it set 5 minutes while your skillet heats up.
  4. Cook: Add a tablespoon of butter or vegetable oil to the skillet. With large skillet on medium-high heat add 1/4 cup of pancake batter to the skillet.
  5. Flip: Let cook until bubbles form on the surface and edges are dry. Flip and continue to cook for 1-2 minutes until golden brown.
  6. Enjoy! Top for butter, powdered sugar, and pure maple syrup to serve!

How to Get Fluffy Pancakes

The trick to making fluffy pancakes is not to overwork the batter. Pancake batter is supposed to have lumps in it. When you overwork the pancake batter, it causes gluten to form. The result is a dense, chewy pancake. Only mix the batter only until all visible streaks of dry ingredients disappear. Lumps in the pancake batter are normal and okay!

To make these pancakes a little healthier, use whole wheat flour, or do half white flour and half whole wheat.

    This is the best pancake recipe I’ve ever made!!! Delicious even without syrup. My kids love it with chocolate bits on it while cooking. This is just perfect!!! Thank you!!!

    Idk what everyone else did to get watery or overly thick pancakes but mine came out perfect. Had a little left over and used it two days later and it actually tasted better. I didn’t have whole milk so i used almond milk and they came out great! I added cinnamon and vanilla as well.
