The crescent rolls provide a fluffy, buttery base, while the eggs, cheese, and sausage make this breakfast casserole hearty, satisfying, and full of flavor. It only takes a few minutes to whip up, so the hardest part is waiting for it to finish baking!

  • Bulk pork sausage – If you prefer, you can use turkey sausage.
  • Refrigerated crescent roll dough – The kind that comes in a tube!
  • Shredded cheddar cheese – You can switch things up by using a different variety of shredded cheese. Try smoked mozzarella cheese or gouda!
  • Eggs – Here’s the best way to crack eggs.
  • Whole milk – Whole milk is best, although reduced-fat (2%) will work in a pinch. 
  • Salt
  • Black pepper

  • Use crumbled bacon instead of breakfast sausage for protein.

  • Add sliced green onions or garnish with minced chives.

How to Make Crescent Roll Breakfast Casserole

1. Prepare

Preheat your oven to 375°F. Grease a 9×13-inch baking pan with butter or cooking spray.

2. Cook the Sausage

Cook the sausage in a large skillet set over medium heat for 6 to 8 minutes, or until it’s no longer pink. As it cooks, use a wooden spoon to break the sausage into crumbles. Drain off the excess fat.

4. Assemble

Unroll the crescent roll dough into the prepared baking dish, pressing the seams to seal them. Sprinkle the sausage and cheese over the dough. Whisk together the eggs, milk, salt, and pepper, and pour the egg mixture over the top of the casserole.

5. Bake

Place the pan in the oven and bake, uncovered, for 35 to 40 minutes, or until a knife inserted into the center comes out clean. Let the casserole stand 5-10 minutes before serving.

  • 1 pound bulk pork sausage
  • 1 tube refrigerated crescent rolls 8 oz
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 2 cups whole milk
  • 1/2 teaspoon salt

Instructions 

  • Preheat oven to 375°.
  • In a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain.
  • Unroll crescent roll dough into a greased 13×9-in. baking dish. Seal seams
  • Add sausage and top with cheese.
  • In a large bowl, whisk eggs, milk, salt and pepper. Pour over sausage and cheese.
  • Bake, uncovered, 35-40 minutes or until a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.
