Ingredients for Chipotle Corn Salsa

  • corn – Use fresh sweet corn to add that hint of sweetness.
  • red onion – Red onion is best because it’s slightly sweet as well.
  • jalapeño – Adding fresh jalapeno peppers adds the heat!
  • cilantro – Fresh cilantro really gives this salsa recipe a refreshing taste.
  • salt
  • lime juice – Squeezing some lime juice adds that citrus kick!

You will want to finely chop all of the ingredients before combining them with the corn. Also, it looks like you need to thoroughly mix the red onion, jalapeno, cilantro, salt, and lime juice before you add it to your bowl of corn. This way all of the flavors are evenly distributed in the salsa.

This is a light and fresh tasting salsa that is perfect for hot summer days! Just enough kick without being too overpowering. It would be great simply with chips, or with your favorite Mexican dishes!

This looks like it would be a simple and fast dish that you could make ahead and store in the refrigerator. I am sure the flavors would come through so much stronger after having time to sit a bit.

How do you store leftovers of this copycat chipotle corn salsa recipe?

You just need to make sure that you store this roasted chili corn salsa in an airtight container and keep it in the fridge. Put a lid on it or cover it with plastic wrap to keep it nice and fresh.

What would you dip into this easy copycat recipe?

I think that this easy corn salsa tastes great with corn chips or even homemade tortilla chips. You can even use it as your favorite topping for taco salads or homemade chipotle burrito bowls, too. When you make your own salsa, it’s really not a lot of work so why not make a big bowl so that you can enjoy some the next day, too? This is an easy snack that isn’t overly spicy so that everyone can join in and eat.

Can you use frozen corn instead of sweet white corn?

You can, but for the best corn salsa, using fresh white sweet corn is the best. Frozen veggies tend to release excess liquid.
