When I started seeing Smoothie Bowl Recipes pop up on my Pinterest feed more and more, I had to try it out.I love smoothies and make them all the time – the greener the better!

I fill mine with lots of fruits and veggies, healthy fats, nuts, and seeds. They’re so good for you!

>> Blueberries –  one of the richest sources of antioxidants and vitamin c to boost your immue system

>> Strawberries – include folate, potassium, manganese, dietary fiber, and magnesium,  also extremely high in vitamin C!

>> Yogurt – high in protein, calcium, vitamin B-2, vitamin B-12, potassium, and magnesium. 

>> Spinach – an excellent source of vitamin K, vitamin A (in the form of carotenoids), manganese, folate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium, potassium and vitamin C

>>Granola – full of fiber that helps to regulate digestion and nuts that have lots of health benefits, as well!

How do you make a Smoothie Bowl?

If you like smoothies, you’ll love Smoothie Bowls! I love that you make the base nice and thick so that you can eat it with a spoon, it just seems to fill you up more when you’re eating with a spoon versus drinking through a straw. And, you’re getting so many good-for-you ingredients to fuel your body, it has to be good!

There are so many ways you could make a smoothie bowl – with spinach or kale, regular or yogurt with bananas, mangos, apples or pretty much any fruit or vegetable you can think of.  Add protein powder or not. Add coconut oil or avocados for a dose of healthy fat. You can even add nuts right into your blender. It’s up to you!

Blueberry Walnut Smoothie Bowl

Ingredients  

  • 1 heaping cup - frozen fruit. I like blueberries mangos, and bananas
  • 2 handfuls spinach
  • 1 tablespoon coconut oil
  • 1/2 cup non-fat yogurt
  • 1/2 - 1 cup liquid - almond milk coconut water, or plain water
  • 1/4 cup Van's Gluten Free Blueberry Walnut Granola
  • Toppings of your choice - blueberries strawberries, chia seeds, coconut

Instructions 

  • Add frozen fruit, spinach, yogurt and liquid to a blender.
  • Blend until smooth. Add more liquid if it's too thick - a little at a time.
  • Remove from blender and add to bowl.
  • Top with granola, fruit, and toppings of choice
