Ingredients
- 6 bone-in, skin-on chicken thighs
- 1/4 cup olive oil
- salt and freshly ground black pepper
- Yukon Gold potatoes, cut into 1-inch pieces
- 1 lemon, sliced into medium slices
- 5 cloves garlic, peeled
- ¼ cup parsley (optional – added on top after baked)
- salt + pepper to taste
Directions:
- Preheat oven to 425 degrees F
- Pat dry your chicken thighs with a paper towel and season on both sides with salt and pepper.
- In a cast-iron skillet
, add olive oil. (you can use a baking dish or a large baking pan if you don’t have a skillet)
- Add the chicken thighs, potatoes, lemon slices, and garlic to the skillet.
- Toss everything together to coat well with olive oil.
- Add the skillet to the oven and bake for 35-40 minutes – until a meat thermometer
reads 160 degrees.
- Remove from the oven and allow to cool for 5-10 minutes before serving with a side salad.
